Expressions Ginger Chai Tea Blondies

Recipe developed exclusively for Expressions Chai Tea

Blondie defined: the same rich, soft texture of a brownie, just without the cocoa! Expressions Ginger Chai Tea blends beautifully with the subtle flavour of orange and white chocolate to create the most decadent blondie. Will have everyone asking for more!

 

Ingredients:

250g butter, softened (1/2 block)

500ml caster sugar (2 cups)

4 XL eggs

8 heaped tsps ginger tea (60ml)

2,5ml orange zest (1/2 teaspoon)

375ml flour (1 ½ cups)

1 slab white chocolate, chopped (80g)

 

Method:

  • Preheat the oven to 170’C.
  • Grease and then line the sides and base of a 23cm square pan with baking paper.
  • Beat the butter and sugar for 2 minutes with a hand held or free standing electric mixer.
  • Add the Expressions Ginger Tea and beat well.
  • Add the eggs, 2 at a time, beating well after each addition.
  • Fold in the orange zest.
  • Fold in the flour 
  • Pour into the prepared tin.
  • Place the cut pieces of chocolate evenly over the top of the blondie mix.
  • Bake for 45 minutes.
  • Turn onto a cake cooler, remove the baking paper, and turn bake onto another cake cooler so the baked top faces upwards.
  • Allow to cool and cut into squares – 4cm is a good size, but you can cut slightly larger squares and serve for dessert with a scoop of homemade ice cream

Tip: You can use any flavour of Expressions Tea of your choice in the blondies, just leave out the orange zest. Easy to double this recipe.
