Expressions Tea Dirty Chai Cake

Recipe developed exclusively for Expressions Tea


This delicious cake combines the flavours of Expressions Cardamom Tea with a hint of coffee, enrobed in a light and fragrant cardamom icing.   Every bite is delightfully light and fluffy.

 

Ingredients:

3XL eggs

315 ml sugar (1 ¼ cup)

5 heaped tsps Expressions Cardamom Tea (37.5ml)

5ml coffee granules (1 level tsp)

250ml warm water (1 cup)

125ml sunflower oil (1/2 cup)

500ml flour (2 cups) 

15ml baking powder (3 tsps)

ICING

45ml butter, melted (3 TBSP)

45ml brown sugar (3 TBSP)

3 heaped teaspoons Expressions Cardamom Tea (22,5ml)

200ml icing sugar (4/5 cup)

45ml boiling water (3 TBSP)

 

Method for the cake:

  • Preheat the oven to 180’C
  • Spray a ring pan with spray and cook. 
  • Beat the eggs and sugar until thick, creamy, pale and fluffy.
  • Mix Expressions Cardamom Tea and coffee powder with the cup of warm water. 
  • Add the warm tea and all the remaining ingredients to the egg mixture and beat for ½ a minute until just incorporated.
  • Pour the mixture into the pan and bake for 25 – 30 minutes or until a skewer comes out clean.
  • Turn onto a cooling rack and allow to cool.

Method for the icing:

  • Melt the butter in the microwave on high for 30 seconds
  • Stir in Expressions Cardamom Tea and brown sugar.
  • Add the icing sugar and boiling water and stir until a thick but pourable icing is formed.
  • Pour the icing mixture over the cooled cake and allow it to run down the sides of the cake.
  • Decorate with halved chocolate balls.

 

TIP:  you can use any Expressions Tea flavours in the cake, however remove the coffee from the recipe.   This cake freezes well.
