Expressions Cardamom Chai Tea Shorties
Recipe developed exclusively for Expressions Chai Tea
This melt in your mouth shortbread will leave you wanting for more. It is simply moreish – a delectable combination of nutty, sweet, buttery deliciousness.
Ingredients:
250g butter, softened (1 cup)
150ml sugar (3/5 cup)
500ml flour (2 cups)
6 heaped teaspoons Expressions Cardamom Tea (45ml)
2,5ml ground cinnamon (½ tsp)
125ml pecans, toasted and chopped (1/2 cup)
Method:
- Preheat the oven to 170℃
- Grease a 20cm square pan.
- Beat the butter and sugar until creamy.
- Add the flour, tea and cinnamon and mix well.
- Stir in the toasted, chopped pecan nuts.
- Press into the pan (it will be a soft, silky dough that holds together but has the texture of nuts) and bake for 30 – 35 minutes until golden brown.
- Cut into squares of fingers or the size of your choice. Remove from tray and place on a cooling rack.
- Place back in the oven at 40℃ for 20 minutes to dry out.
- When cool, store in a sealed container.
TIP: You can substitute pecan nuts with any toasted, chopped nuts of your choice, OR chocolate chips. Use any flavour of Expressions Tea to add a magical taste to your shortbread. This recipe is easy to double.
